sensational schnitzels

Serves 6
Ingredients
6 chicken thighs (or breasts, butterflied)
2 cups grated Grana Padano cheese
4 cups panko breadcrumbs
1/2 bunch parsley, chopped
Zest of 2 lemons
5 eggs
1 cup milk
2 cups plain flour
Vegetable oil
Murray River Salt Flakes
Lemon wedges (for serving)
Method
1. Prepare the Chicken: Trim excess fat and cartilage from the chicken. Place each thigh between baking paper and gently pound to flatten.
2. Make the Crumbs: In a bowl, combine breadcrumbs, Grana Padano, parsley, and lemon zest.
3. Set Up Stations:
– Place flour in one tray.
– In a separate bowl, whisk eggs and milk.
– Set the breadcrumb mixture in another tray.
4. Coat the Chicken: Dredge each chicken piece in flour, then dip in the egg mix, and finally coat in the breadcrumb mixture. Press crumbs firmly onto both sides.
5. Fry: Heat oil in a pan to 180°C. Fry schnitzels for about 2 minutes on each side until golden and crispy.
6. Drain and Season: Transfer to a paper towel to drain excess oil. Sprinkle with salt.
7. Serve: Plate up with a wedge of lemon and a refreshing salad.
